For a fiber and protein kick, try this twist on breakfast with a new super grain: freekeh!

Ingredients

  • 1/2 cup cracked freekeh
  • 1 cup water
  • 1 cup skim milk
  • Pinch salt
  • 1/2 tsp cinnamon
  • 2 tbsp maple syrup
  • 2 tbsp dried cherries
  • 2 tbsp pistachios

Directions

Combine freekeh, water, milk, salt and cinnamon in a medium saucepan. Bring to a boil, then reduce the heat to a simmer and cook uncovered, stirring occasionally, for 25 minutes. Stir in the maple syrup. Divide the cooked freekeh between two bowls. Top with dried cherries and pistachios. Serve immediately.
