INGREDIENTS

1 fillet fresh salmon

1 tomato  (chopped into small pieces )
1 carrot (very finely chopped)
1 green onion
1 tsp ginger, salt, garlic
2 cups fresh or day-old cold cooked rice
3 tsp oil
DIRECTIONS
  • 1. Preheat oven to 400°F
  • 2. Sprinkle the salt and pepper evenly over the salmon and bake 20 minute, Move out from oven and use fork to break the salmon into small pieces.
  • 3. Heat a wok or large frying-pan over a high heat, add oil,garlic, ginger. carrot, salmon, sprinkle salt, cover lid and cook 2-3 minutes, open the lid and stir;  added tomato on the top, cover lid and cooked 1 minute, then added cooked rice (fresh cooked ) to stir-fried about 2 minutes; add the green onion to stir-fried 1 minute. It is done and ready to serve.
